Palate
- The
palate shows attractive fruit in abundance, a characteristic of
Pemberton Sauvignon Blanc and closes with a real fruit acid drop
finish.

- Top
Colour
Bouquet
- The
grapes were picked late in the season at optimum ripeness
and peak condition. The cool climate Semillon
characters are dominant with good acid and gooseberry fruitiness.

Palate
- Cold
settling and cool fermentation in stainless steel preserved
the flavours from the fruit, and the wine showed potential
to benefit from ageing in oak. The wine spent four
months in second fill French and American barriques.
The maturity from the wood and the flavour of the oak, is
in fine balance with the fruit flavour.
The result is a full flavoured palate and a long aftertaste.
This wine will improve with age.

production wine will reach peak drinking after 5 years. A sophisticated
wine showing incredibly rich and sumptuous flavours, with a velvety
palate and a dry finish.
